Faux Mash Potatoes and Gravy with Collard Greens

There is something so comforting about mash potatoes and gravy, but let's face it, it's not the most nutritional of options. Have no worries, here is a delicious nutritious substitute you and your children will love! 

  • 1 Cauliflower
  • 1 Daikon
  • 1 Rutabega
  • 1-2 small potatoes
  • 1 yellow onion
  • Garlic cloves
  • 2 bunches Collard Greens
  • Apple Cider
  • Cremini mushrooms
  • Nutritional Yeast
  • Olive Oil

Collard Greens, garlic clove, Apple Cider Vinager

Mushrooms (cremini and portabello), onion, garlic, olive oil, nutritional yeast

Boil cauliflower, daikon, rutabaga, and potatoes in pot of water. When soft, drain water and smash up. Fry onion and garlic. Add salt, pepper, more oil or cultured butter if you prefer. 

For Collard Greens, chop up and boil in water with olive oil, minced garlic, salt and pepper. When soft add Apple Cider Vinegar for flavor. 

For Gravy, saute cremini mushrooms with onion, garlic, olive oil. Then add water and nutritional yeast.  Blend into a gravy. Salt and pepper as desired. Make a birds nest with cauliflower mash for collard greens and top with gravy and sautéed diced portabello mushrooms and red pepper flakes for a spicy tongue.
